Bruno Trial studied at the Cordon Bleu in Paris and apprenticed in Paris at one of the prestigious bakeries where he learned to make croissants and other pastries the French way.  Start to finish for his croissants and pains au chocolat are six hours each day.

We came to Sonora from Paris eleven years ago after buying a bed and breakfast in Sonora, Barretta Gardens Inn, on line. 

 

 We bought Bon Appétit in October of 2004 and sold the B&B in April of 2005 so that we could concentrate on the café.  Bruno,  born in Paris, always wanted to live in the U.S.  Sally, a Californian by birth, agreed after 10 years of living in France to return to the U.S. but only to California.

 

We had the café for 5 years and now feel that it is time for a new adventure.  Our crepe cart was made in Canada and we are planning to do special events and farmer’s markets.  Our commercial bakery, which we have built, will be our commissary for our crepe business as well as our venue for selling  our pastries  wholesale to local coffee shops and retail as special orders.

 

 

 

 

 

 

 

Our slow cooked ham comes from Verona, Italy imported by a French company called Epicure Imports.

Our chocolates are French, as well as the cornichons (French pickles) and nicoise olives that we serve.  We use French Brie and French Goat Cheese. 

 

We look for the freshest vegetables and fruits, organic when possible, and buy many of these at the Farmer’s Market in Sonora from May until October.
